I threw two cans of corn, a can of black beans, and 1 and 1/2 cups of salsa in the crock pot today with 4 chicken breasts, and boy, is it yummy.  Served it with tortilla chips and a green salad.  The chicken is very tender.  My family loved it!  The crock pot is my best friend these days.  Will try this one again.

    I make a recipe very similar to that for fiesta tacos. I never thought about putting it in the crock pot! Thanks for the idea. Love ya!

    O.K. try this great dip also with black beans, red onion (hmmm..may have to skip this because of the kids), cilantro (another one may have to skip!??! – maybe not), pkg. frozen corn (thaw & drain), chop a couple of avacados, tomatoes, a little garlic, splash of balsamic vinegrette & lime juice & you are set to go with those hard mexican chips! Sorry I’m a little like Rachel Ray when it comes to increments – a little of this & that & WOW – people love it!
